In Seoul, coffee is only part of the experience.
Cafés are social spaces — places to meet, talk, date and spend time together. Architecture, furniture, ceramics, art, sound and lighting all become part of the ritual.
You don't simply choose what you want to drink.
You choose where you want to be.
So why should that experience end at four in the afternoon?

Instead of separating coffee and evening culture, Seoul is showing how one beautifully considered space can move with the rhythm of the day.

Then lower lights, a different soundtrack, glassware, small bites, cocktails or whisky.

And that's where culture meets commercial intelligence.

Across much of Europe and the West, we still think in categories:
Café. Restaurant. Wine bar. Cocktail bar.
Over the next five years, I expect those boundaries to become increasingly fluid.
The opportunity isn't simply adding cocktails to a coffee menu. It is designing hospitality around time, mood and community — allowing one strong identity to transform from AM to PM.
